Yield: 6 servings

Ingredients

  • 3 cups Aromatic Rice, cooked and cooled
  • 1/4 cup Coconut Oil
  • 2 bunches green onion, cut into 1 1/2" lengths
  • 1/4 cup fresh ginger, rough chopped
  • 1 head chopped garlic
  • 4 red bird or thai chilies, sliced
  • 4 carrots, julienned
  • 1 package Dried Pineapple 
  • 2 pork tenderloins, thinly sliced
  • 2 T fish sauce
  • 1/4 cup soy sauce
  • 1 lime, juiced
  • 1 bunch cilantro, rough chopped
  • salt & pepper to taste 

 

 

 

 

 

 

 

 

 

method

Season the pork tenderloin generously with salt and pepper. Heat a large pot or Dutch oven over medium to medium-high heat and melt the coconut oil, being careful not to burn the oil. Add the pork and sauté until lightly browned, then immediately add the remaining fresh ingredients (reserving the cilantro). Continue to cook for 5-6 minutes until carrots are tender. Add the rice to the pot and cook for another 5 minutes, stirring constantly to avoid burning. Season the rice with the fish and soy sauces and lime juice. Plate and top with the chopped cilantro and serve.
