- 1 cup Long Grain Rice
- 1/2 cup cilantro, roughly chopped
- 1/4 cup coconut milk
- 1 3/4 cup chicken stock
- 1/2 T lime juice
- salt & pepper - to taste
Rinse rice vigorously 2-3 times in cold water, or until water runs clear.
Bring 375 ml ( 1 and ½ c) chicken stock to a boil, stir in rice. Simmer covered on low for 15 minutes.
Stir in remaining ingredients and let rest covered for 10 minutes, or until desired texture is achieved. Season to taste and serving suggestions include garlic grilled shrimp or fish.
