Traditional Filipino dessert with sweet (sticky) rice.
- 1 cup Violet Rice
- 1/2 cup Aromatic Rice
- 2 1/4 cup water
- 1/3 cup coconut milk
- 1/2 cup Cane Sugar
- 1/2 t vanilla extract
Combine sticky and regular rice, vigorously rinse 2-3 times in cold water and drain.
Add water and a pinch of salt, if desired. Cook on low heat, partially covered for 20-25 minutes.
In a large saucepan, bring coconut milk to a boil, then add cane sugar. Stir constantly until coconut mixture is about ½ the volume, and frothy. Add the vanilla.
Add the cooked rice to the coconut mixture, mix well and spread evenly in pan. Cook over medium heat until the air holes in the rice dry out. Transfer to a serving dish and optionally serve with whipped cream on the side.
