- 2 cups Aromatic Rice
- salt, to taste
- 1/2 cup water
- 1 medium onion, chopped
- 1/2 lb diced tomatoes
- 1 1/2 cup water
- 1 kg beef or pork stew meat (cut into 1/2 inch cubes)
- 3 garlic cloves, minced
- 2-3 T vegetable oil
- 1 1/2 T flour
- 8 large mild green chilies, diced
Cook rice as directed on package. Set aside.
Spread meat in one or two layers in a saucepan with tight fitting lid. Add salt, minced garlic and 125 ml (½ c) water. Cover pan and simmer on low until meat is tender and water has evaporated away (about 1 hour).
Add vegetable oil to the meat. Turn heat to medium, add chopped onion, and brown the meat. Sprinkle flour over meat, and brown lightly, stir.
Add diced tomatoes, diced green chilies and 375 ml (1 and ½ c) water. Cover the pan and cook over low heat for about 20 minutes. Serve with rice.
